well in my humble opinion and experience, its still the best to go old school when choosing a a career. a course that has a professional license, e.g. accounting, lawyer, architect, doctor etc. work for companies in 2-3 years, then transfer to another to build your skill, knowledge and experience. after perfecting your trade, go freelance or create your own business. working for other companies is just a stepping stone.
